Baked by Melissa cupcake kits launch at Target

Baked by Melissa has launched a new line of at-home baking products exclusively at Target, aiming to attract holiday shoppers. As of Sunday, the retailer features the brand’s cupcake kits, cupcake liners, and a cupcake pan, all reflecting Baked by Melissa’s signature bite-size style. The product line includes three festive flavors: Christmas Tie-Dye, Marshmallow Hot Cocoa, and Red Velvet.

This development aligns with a trend in which restaurants are diversifying into consumer packaged goods to enhance revenue amidst industry challenges. While some established chains like California Pizza Kitchen have long been in the frozen foods market, others, including Chick-fil-A and Dutch Bros, have recently ventured into grocery products. Smaller brands, such as Momofuku and Carbone, benefit from expanded visibility on grocery shelves, allowing consumers to experience their offerings without the need for reservations.

Founded in 2008 by Melissa Ben-Ishay, Baked by Melissa operates nine permanent locations in the New York area and ships minicupcakes nationwide. The brand has gained significant online traction, particularly on TikTok, where it has over 2.8 million followers drawn in by engaging recipe videos. Ben-Ishay’s social media presence has led to collaborations with notable partners such as Ferrero and Wonder.

The move into retail was prompted by Ben-Ishay’s visit to a grocery store with her children, where she felt Baked by Melissa should have a presence in the baking aisle. Although the transition to retail is a slower process compared to rapid product development for events—like creating Knicks-themed cupcakes—Ben-Ishay noted that the festive launch aligns perfectly with the crucial holiday shopping season. Target aims to reclaim its core customer base this year after facing challenges during the previous holiday season.
